Jerky question

Jerky question

I took a doe the other week. Now I do butcher my own deer when I have the time. I had a Anticosti deer hunting trip so I dropped the doe off to a butcher in central Jersey.

My wife picks the deer up on Tuesday and by thursday the deer jerkey is growing mold all over it. Not only that but some is almost as think as a dime is wide .

I do not want to name the butcher but should I take this jerky back to him ? I have had it home for a week and one day .

That's doesn't look very good, I would take it back..

Did it look like that when you picked it up?

I bet I know where you got that.He uses a dehydrator,no cure,lousy cuts and doesn't vacuum seal properly.
